Single serving banana pancakes

Many of us live alone, and a big batch of pancake batter may make too many pancakes for our needs! Whether you’re looking to treat yourself on Sunday morning, or you want to get away from the kids for a meal on your own, these single serving banana pancakes are the perfect fun and easy, yet indulgent breakfast! Bananas are high in potassium, and hemp hearts boost the recipe’s protein and fibre content.

Ingredients
 1 ripe banana
 ¼ cup plant-based beverage or milk
 1 tsp vanilla
  cup flour
 ½ tsp baking powder
 ½ tsp cinnamon
 1 tbsp hemp hearts

Instructions

In a bowl, mash the banana. Add the milk and vanilla to the mashed banana and stir.⁠

Add in the flour, baking powder, cinnamon, and hemp hearts into the banana mixture and stir together until combined.⁠

Heat a medium-sized frying pan over medium heat.⁠

Spoon out the batter into the frying pan to form 3 pancakes.⁠

Top with fruit, maple syrup, nut butter, or all three!
