Tofu Glory Salad Bowl

Whether you’re vegetarian, vegan or simply trying to eat less meat, tofu is a fantastic way to incorporate some much needed protein in your diet.

Here is a delicious yet simple tofu salad recipe that is great for lunches and when you’re on-the-go.

Plant based recipe: Tofu Glory Salad Bowl

Serves 8


The bowl:

  • 4 cups cooked brown rice
  • 2 cups beets, grated
  • 2 cups carrots, grated
  • 2 cups almonds, toasted
  • 2 cups greens (kale, spinach, etc.)
  • 2 cups tofu, cubed

Glory Bowl Dressing:

  • 1/2 cup nutritional yeast flakes
  • 1/3 cup water
  • 2 tbsp tamari, low sodium
  • 2 tbsp cider vinegar
  • 1/2 cup vegetable oil
  • 1 tbsp Tahini paste


  1. Prepare your favourite brown rice and set aside
  2. Sauté tofu cubes in a skillet
  3. To prepare dressing, combine nutritional yeast flakes, water, tamari, or soy sauce, apple cider vinegar and tahini in a blender. Add oil in a steady stream (you will have leftover dressing to use again)
  4. To assemble the bowls, place cooked brown rice into 8 bowls, top with beets, carrots, spinach leaves, almonds and sauteed tofu cubes
  5. Drizzle bowls with dressing
