Salsa is a versatile and easy-to-make addition to many meals and snacks. Add as a topping to fish, chicken or seafood with your favourite variety (see below), or enjoy the old fashioned way with lightly salted corn tortilla chips. Lucky for us, fresh tomatoes are available all year round. Choose plum tomatoes for this recipe as they are meatier and have fewer seeds.
- 2 plum tomatoes, diced
- 1/4 cup fresh coriander, chopped
- 1 jalapeno pepper, minced
- 1 green onion, finely chopped
- 1 Tbsp lime juice
- 1 Tbsp vegetable oil
- 1/4 tsp salt
- 1/4 tsp pepper
In a bowl, stir together tomatoes, coriander, jalapeño pepper, green onion, lime juice, oil, salt and pepper.
- Add chopped avocado and mix gently
- Add 1/2 cup black beans
- Add 1/2 cup chopped mango
