Cranberry Apple Bread

One of the best comfort foods out there is bread. Why not change it up a bit and add in some tasty (and healthy) apples and cranberries? We can always stand to add a bit more fruit to our diet, so why not pair it with one of our winter faves?

INGREDIENTS

  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 2 cups apples, chopped
  • 3/4 cups sugar
  • 2 Tbsp oil
  • 1/4 cup egg beaters/simply egg whites or 1 egg
  • 1 cup fresh/frozen cranberries

INSTRUCTIONS

  1. Mix flour, baking powder, cinnamon and baking soda and set aside
  2. Mix apples, sugar, and oil in bowl then stir in egg beaters
  3. Mix flour and apple mixtures until moist (batter will be thick)
  4. Stir in cranberries
  5. Spread butter into a greased 8 1/2 by 4 1/2 by 2 1/2 loaf pan
  6. Bake at 350 for 1 hour or until done
  7. Let stand in pan for 10 minutes before removing from pan and cooling on wire or rack
